Roasted Parsnips

Hello Sparkfamily! Are you out of baking potatoes? Not to fret! I got a great sub for you! Take a gander at this!


2 tbsps vegetable oil
1 lb parsnips


Pre-heat the oven to 400 °F.
Scrub the parsnips and cut them into sticks.
Put the oil in a large sandwich bag and add the parsnip sticks. Shake well to coat the parsnips.
Put the parsnips and the oil in an oven proof dish.
Roast for 30 minutes, until cooked through, with crispy edges. Enjoy!

    What a wonderful substitute for so many veggies. Sometimes I add some to my mashed sweet potatoes along with carrots, as well as to my mashed potatoes. emoticon

    Love parsnips! To me, tastes like a carrot with attitude! One time my grandmother had gotten a fresh horseradish to grate and use to make horseradish sauce. I thought it was a parsnip. I cut a little piece of it off (with her permission -- she didn't tell me it was horseradish!) and YIKES . . . it wasn't parsnip! We laughed about it for years! Never made THAT mistake again!

    Not sure I will try the parsnips though, I really do Not like them, comes from being
    made to eat them as a child, I tried one not long ago and I still don't like them.
