BTS - Acceptance and Obstacles

I never managed to do my blog on acceptance last week so I am adding it in today. Most of you know that I have been in maintenance mode for quite some time. My weight fluctuates within the same 5 pounds depending on my exercise levels, stress levels and frequency of meals at home. I know, and need to accept, that my healthiest is weight is right where I am at because when I get lower, I tend to get sick easier. I need to make sure I am eating enough, which is already quite a bit, to level myself out with my exercise.

My obstacles always surround my schedule, or actually my kids' schedules. Making dinner at home and healthy and fast is my biggest problem. I am committed to doing it but it is very difficult. I frequently think I have more time than I actually do. And I just found out that my T/Th are getting even busier because Nicole will now have softball practices on those nights as well as Andrew's baseball practices. Plus on Thursdays my daughters have choir/voice lessons. Now more than ever I am going to have to think smart on those nights. I will either have to have something that I prepare earlier and just pop in the oven, use the slower cooker or make it a very quick meal to make.

    Double batch cooking really helped me when my kids were in the busy years and I was also going to college. Cook 2 meals on the weekend and freeze one for the following week.
    Spaghetti sauce, chili, lentil stew, enchiladas, chicken cacciatore all work great. I have also found some pre-packaged simmer sauces that are excellent. Frontera is Rick Bayless the famous Mexican chef's brand (at Safeway) and Saffron Road makes an excellent curry simmer sauce (available at Sprouts or other healthy food stores). Brown meat and add lots of veggies for a nice main dish.
    Enjoy those busy years because they really do go by fast.

    I did not realize you were in maintenance. It is good that can know where your body is most comfortable at! Children's schedules can be complicated early prep or even better slow cooker meal really are the way to go!! Good luck!!
