I want to share one of my favorite soup recipes with you, but I don't have the nutrition values, so I'm just doing it between you and me. You can do the rest-it's easy enough!
Ingredients: Combine the following:
32 ounces low sodium broth, chicken or veggie
32 ounces water
Frozen 1 pound bag cauliflower
Frozen 1 pound bag sliced carrots or 1 pound fresh baby carrots
1 can Cannellini beans drained
3/4 cup grated Parmesan cheese, divided
In large pot, cook veggies in broth and water until tender,
Add beans, simmer 1/2 hour.
Allow mixture to cool down a bit
Divide cooled soup mixture into 3 batches.(do not fill past 2/3 or 3/4 of blender capacity)
Add 1/4 cup Parmesan to each batch in blender (serves to thicken and add taste)
Place cap TIGHTLY on blender and puree or mix each batch at low speed until smooth
Serve and enjoy
I make this all the time now because its so creamy and such a comfort food. God knows
we need all the warm comfort we can get with all the freezing weather and storms all over the country this winter.
