Day 2 went well, the meals were the same as day 1 with the addition of 3/4 of brown basmati rice at dinner time and this time I didn't forget the avocado on my lunch time salad. I didn't feel as hungry as on day 1, so my body must be adjusting. It's also adjusting to the food because I was down less than the day before 0.3 which makes for a full pound over 2 days - not bad since I was stuck for a while before. Last year I lost 1.2 pounds over the first 2 days.
I was out of the spice coco sauce, so I made a new batch
1 onion, chopped
3-4 cloves of garlic, minced
1 teasp each of ginger, cinnamon, cumin, tumeric and back pepper
a little cayenne
1 can of full fat coconut milk
1/2 teasp sea salt
1 Tbsp brown sugar (I don't like sweet so I leave that out)
Saute the onion, garlic and spices int he coconut milk, add salt (and sugar), reduce for 20 mins.
Makes 4 servings,
I like to saute the onions in a little olive oil, then add the garlic and after about a minute add the spices and salt, after another minute the milk and then simmer to reduce.
I put the leftover 3 portions in containers. The sauce freezes well (my DH says I freeze anything!) for later use.
Dinner was sauteed chard in the coco sauce, 3/4 cup brown basmati rice and the carrots and beets. Again, very colorful and even looked nice when I stirred ti all together. I used a plate for the picture but next time I'll have it a bowl - this is comfort food for me :)
