It's getting toward the end of the month and with just starting to catch up to the stocked pantry I had a few months ago, having not been able to properly grocery shop the last couple of months, we're starting to run low on the fresh stuff. I won't be able to do a proper grocery shop for a week, so I'm starting to have to be more creative in our meals. Fortunately I was able to stock up on a few key items, I love frozen fruits and veggies this time of the year, they're cheaper than fresh and I still get a lot of nutrients that way.
The kids got to go to school, despite the half foot more of snow today. It's still too yucky for me to want to try walking outdoors, I'm afraid to fall on the ice under the snow on the paths right now.
I still had breakfast before I shooed them out the door.
Mid morning I had a small snack, a handful of graham cookies.
Lunch ended up a little later than usual, my mother calls me nearly daily.
I ended up with wild rice (locally grown since most of it is a MN commodity) and salmon (wild caught, in the USA, the only fish I can find that way).
Afternoon consisted of an apple.
Then near 3 pm I had a handful and a half of pistachios.
I didn't feel like cooking and I knew my husband was going out again to get my daughter from chess club, so I had him pick up some cheap pizza.
But one piece wasn't enough for me, even though they were huge pieces! I was able to stop at 2.
I admit, there were no veggies today. I was not on top of it. It's so much easier to get fruit in my days than veggies. Friday will have more veggies, I have the chicken still, so perhaps soup or a hot dish? It will be easier next week when I have more fresh veggies in my fridge, it's so bare today.
