One of the most enjoyable things about changing my diet/lifestyle has been trying new recipes and just cooking more in general. It's kind of funny, at lunch, more and more people are asking "So, what do you have today?" It's usually nothing too time intensive, or has a ton of ingredients. The only real difference is it's a) not a frozen dinner, and b) usually not a pre-packaged "add water and boil" dish.

Tonight I wanted to use up some kale that was wilting, so I took ingredients I had on-hand to make a tomato, egg, onion and kale bake. I also am trying to curb my sweet tooth, so I made a cranberry compote for my oatmeal (and general eating). It was so easy! And fun. I'm glad cooking, and using fresh, healthy ingredients, has become a definite part of my new lifestyle.

    Those are great ideas! I have some kale that's wilting too. It is amazing to me how many people are impressed by simple meals.
