So I am going to be 43 in two months and I just started cooking for the 1st time in my life last September October. Its a real pleasure as I don't have to do it but I enjoy it.
I have survived a week without gluten, actually I THRIVED! Not one binge or no emotional eating either!
Today I made ground chicken chilli, roasted root vegetables and am boiling beets.
Beets are one of my favorite as they are so sweet but have so much nutritional value. I eat them boiled with nothing on or I make a beet salad with finely shredded feta cheese, lettuce or greens, some lemon juice and yum yum.
The chilli is to freeze as we had chilli already this week (beans are new to me) never liked them before now. I don't love them but I can eat them if they are cooked enough. Plus they are a good source of protein. I still hate hummus but that's okay.
The internet is great for inspiration and guidance when I am cooking as are the recipes on Spark.
Roasted veggies are great because I use olive oil and lots of fresh herbs like chives, rosemary and basil.
Tonight's Dinner is grilled marinated steak, roasted veggies and/or beets. May not be the best
combo but its all healthy.
