Full disclosure: I'll never be a vegetarian (and we won't even discuss vegan). But starting next week, I'm going to start following the Meatless Monday idea. Now that I'm getting the CSA boxes again I'm going to have some amazing veggies. I already have brown rice, quinoa, etc. And I always have things like milk and ricotta on hand.
I'm a good cook. I have a lot of yummy vegetarian recipes. And I grew up on meatless Fridays, so it's not a stretch at all.
Let's see -- Ted Allen's savory bread pudding for dinner next Monday, perhaps?
