For breakfast I had some cashews (ick) and milk. I bought various nuts, trying to convince myself maybe my taste buds have changed. Not so much.
For lunch I made couscous salad with brocoli, carrot, sun-dried tomato, feta and mint. For dinner I had more of that and tried to make some pumpkin soup. I think I put too much curry powder in it. Bah.
As a snack I had a mozzarella/lettuce/tomato salad with balsamic vinaigrette.
Breakfast was 2 egg omelette with cottage cheese and toms.
My snack was Greek yogurt and mandarin oranges and 3 walnuts. Marginally better than the cashews.
For dinner I had a little bit of the couscous salad and some broccoli cheddar soup, made from scratch with a little bit of flour (don't tell!), sharp cheddar, creme fraiche and some white wine. I've never made it before and am please with the result of just winging it.
So again, not entirely Atkin's friendly, but a drastically reduced amount of carbs compared to my usual fare, and all homemade.
