Meal Planning for 2014

Hope on my Sapphire BL Winter Challenge mentioned that she plans meals for a week.

I thought I might give it a try. I like to cook/prepare low carb/paleo in batches.

Saturday
BF: Scrambled egg with cheese
Grilled Oscar M. beef wiener

(I scramble 6 eggs and mix with cheese then put them into plastic containers with the George Foreman grilled wieners so I can just go grab the food and heat a portion in the microwave.)

(Batches of salads: I wash and cut the lettuce, broccoli, cauliflower into 6ths and let it drain on paper towel. I boil, cool, and peel 6 eggs. Then I spread it all into 6 containers and put cheese on top with a few dry roasted peanuts. Pop them in the frig and add ranch dressing when I am ready to eat one. If I have leftover hamburgers or weiners or any meat, I will portion that out over the salads. )

Lunch: Salad

Supper: Salad

*3 quarts of water
*snacks: Atkins Chocolate and coconut bar, peeled grapefruit, dry roasted peanuts, spoonful of chunky peanut butter.

Sunday

1.Slow cooker pot roast. with broccoli and cauliflower cut in large pieces. Add a packet of brown gravy mix to the liquid in the cooker.

2. Add some of the meat and gravy to a low carb flour tortilla, heat in microwave.

3. Salad with some of the roast cut up and added.

*3 quarts of water
*snacks: Atkins Chocolate and coconut bar, peeled grapefruit, dry roasted peanuts, spoonful of chunky peanut butter.


Monday
1. Slow cooker pork roast/chops with brown sugar bbq sauce.
Fried green beans in oil and garlic.

2. Add some of the meat and gravy to a low carb flour tortilla, heat in microwave.

3. Salad with bbq pork cut up and added.

*3 quarts of water
*snacks: Atkins Chocolate and coconut bar, peeled grapefruit, dry roasted peanuts, spoonful of chunky peanut butter.

Tuesday
Go back and repeat Sunday's menu b/c there is lots of roast left over.


Wed.
I take the DAY OFF from low carb and go out for lunch. I like Huddle House chicken fried chicken with baked potato and green beans with cornbread. I only eat half and bring the other half home for supper. I might get a McDonald's choc covered ice cream cone.

OR...I might go to Rally's for the small bacon burger combo. I eat the top bun with the burger, 5 of the fattest fries, and half of the diet coke/dr.pepper. Maybe follow up with a small Wendy's frosty - chocolate, of course.


Thursday:
Go back and repeat Monday's menu b/c there is lots of bbq left left over.

For 2014, I'm branching out with my slow cooker recipes. Pinterest has a ton that I am anxious to try. If you have a fav slow cooker, paleo recipe, please let me know.

P.S. I never defrost meat before putting it in the slow cooker. Just leave it on over night and it will be done.
