Christmas Eve

So today is Christmas eve. I am having supper for my family for Christmas supper. So I decided I would get a jump on the prep work and slice the veggies for the relish tray yesterday with my brand spanking new mandolin. So Im slicing the cukes and marveling at what an awesome job it does, although I couldnt fit the hand guard on the cuke so I just held it with my hand.....ya, sliced right into my finger! AHHHHH! Probably need stitches, but I have no insurance and the fact that I am a horrible patient and a nurse in training, I decided to doctor myself. Hopefully my finger doesnt fall off! emoticon Oh well, I have had worse happen.

So I got a new bread machine yesterday and a really yummy low carb bread mix that I made in it and might I say it is wonderful! Now I can make stuffing fave....and be able to enjoy it with NO guilt! emoticon emoticon

I also made a low carb orange cheesecake for dessert. I never have dessert after my meals and especially not now that Im low carbing.....just dont have the desire....but this is a special occasion. And I can fit it in with no guilt. Gonna make a low carb breakfast bake for breakfast that will probably carry me through until supper time.

I must say that I am so proud of myself for creating new and healthy ways to stick with my lifestyle change so that I can enjoy Christmas dinner too! Much better than sitting with a salad and watching everyone else enjoy my hard work.

    emoticon Yikes, hopefully your finger will be okay. Whenever I see a mandolin being sold on t.v. I switch channels, they scare me. Have a wonderful Christmas. Your low carb bread, what a treat.
