First snowfall; time to bake; recipe included
Tuesday, December 10, 2013
We had a few snow flurries here on Long Island last week, but today we have a real snowfall, and it looks beautiful. Wish I had one of those digital cameras so I could post some scenes, so I guess that will be something I need to do in the new year. As for today, I just took a dozen oatmeal-cranberry muffins and a small loaf out of the oven, so life seems warm, toasty, and very fragrant indoors this morning. I've been recovering for over two weeks from a complicated cataract surgery, so baking is something I'm very grateful to be able to do again. I'll post the recipe; one I've done so often, that I know it by heart. I don't have the calorie counts, etc., so just figure it out as you go and make substitutions and changes where you want. I just doubled the recipe to make the extra small loaf.
2 cups oats
1 cup milk, any kind works
I egg, beaten
1/2 cup applesauce
I cup sugar or equivalent sweetener
1/2 cup raisins, or dried or fresh cranberries
1 T cinnamon
Mix together dry ingredients, then add wet
Spoon into muffin tins; Makes a dozen
Bake at 350 for 35 minutes.
