Cream of Avocado Soup

Serves: 4 Preparation Time: 20 minutes


1 green bell pepper, chopped
1 red bell pepper, chopped
1 red onion, sliced
1 clove garlic
1/2 lime, juiced
2 cups water
2 cups carrot juice
1 cup soy, hemp or almond milk
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/8 teaspoon cayenne pepper, or to taste
2 avocados, peeled, pitted and chopped
2 tablespoons fresh cilantro
1 tomato, diced

Place peppers, onion, garlic, lime juice and water in a high-powered blender and blend until smooth.

Add mixture to a pot along with the carrot juice, non-dairy milk, chili powder, cumin and cayenne. Simmer over low heat for 20 minutes. Return to blender, add the avocado and blend until creamy. Stir in the cilantro.

Serve warm or cool but do not reheat once the avocado is added. Top with diced tomato.
