Dinner Drop

Thank God today was easy considering how tired I was.
For dinner I made baked pork loin chops, baked potatoes, and salad. The Salad was great, the potatoes were tender and delicious and the pork was dry and bland. I am not sure what I did wrong, but I do have a fix. Tomorrow I will simmer the pork in a pans of diced tomatoes, onions, garlic, chili powder, and chicken stock(1-2 hours) I will then fry rice for 5 minutes mix it into the simmering mixture, cover and continue to simmer for 20 minutes. I am hoping it will add flavor to a badly made meat.
My eyes, mind, and body are tired and want to go to bed. But my legs are too tired to take me.
Anyone want to carry me emoticon

    If you have tough cuts of meat slow cook them in juices for ages. Slow cooker is best for this job - chuck them in in the morning with a whole stack of veggies and liquid (stock, water or packet etc) and sit back until dinner time!
    That lack of sleep is no good - I'd help you but I wouldn't be able to life you!! LOL
    I'm still working on my strength training but it's coming along slowly! emoticon
