Weekly food prep w/pics

After enjoying the extra hour of sleep I woke up ready to tackle the day! I made some scrambled eggs w/cottage cheese for breakfast then I got myself all organized and started cooking...

Seasoned spaghetti squash and into the oven for baking (the mini one is the one any only squash from my garden).

While the squash baked I cooked up a batch of chicken breakfast sausage (some whole, some cut up). For breakfast each morning I cooked 1 egg with chia seeds, sauteed avocado in kerrygold butter and added a whole chicken bfast sausage.

Then mixed the cooked spaghetti squash with sauteed artichoke hearts, chopped scallion, tomato and the chopped sausage.

And lastly packed up some snacks. I sliced some kerrygold cheese and wrapped the slices in applegate uncured pancetta. Other snacks this week will be either banana, apple, olives, or nuts

Yesterday was busy with food prep, cleaning, and organizing but I had lots of energy and it felt soooooooo good to get so much accomplished. I still have some organizing to tackle but I'm not stressing about it. I'll take it one drawer and one cabinet at a time.

This morning is Day 1 of the 21-Day Sugar Detox. I weighed in and took all my measurements. I am excited to see the progress at the end of the 21 days.
