A few of my eats lately:

Grilled Tilapia, Broccoli & Cauliflower, Rice & Strawberries

Grilled Chicken Breast, Beautiful Salad, Butternut Squash

Even though this pic doesn't do this dish justice, I am telling you it was DELISH! My first experience ever of making Quinoa. I cooked it in Chicken Broth. This was a casserole with broccoli, rotisserie chicken, quinoa, cheese & a dab of sour cream. Freaking wonderful! My kids devoured it like it was junk food. LOL - I smiled inside as I knew I was feeding them very well. Hee hee. A mom's secrets-shhhhh!!!

I will be using Quinoa more in the future and experimenting with it.

And this man - this is my awesome Grandpa. He came to my work today to Sabotage me!! He brought me a homemade chocolate cake. I can't resist. He's been making them for me since I was a little girl. What a sweetheart and I will enjoy a peice (or two!) guilt free! Balance, people. It's all about Balance!!

    Your grandpa is so sweet! Kudos to you for knowing you can still enjoy a treat, after all a cake made with love has zero calories. Right? And there are so many people who would have refused it orotherwise hurt his feelings in the name of health, good for you for not doing that.

    Love quinoa too, my fav way is with toasted pecans spinach, tomatoes and fresh Parmesan. I have to make a small amount or I'll eat it all!!

    I almost didn't open your blog when I saw the title because I don't like to look at pictures of sweets etc. I was delighted to see pictures of healthy foods! I love quinoa. You were smart to cook it in broth....it adds a lot of flavor to it. I generally throw my leftover quinoa in any homemade soup I happen to be making each week. It's a lot healther than other starches typically added to soups and it's a great way to get rid of leftovers.

    Your grandfather is a good looking guy....much to young looking to be your grandpa!

    emoticon I've been making quinoa for awhile now. It is wonderful as a salad too. There is a great recipe in the SP cookbook.
    emoticon And you're right - it is all about balance. I just track whatever goes into my mouth and follow my Calories In & Out, as well as fat, carbs & protein to make sure I am fairly close to where SP says I should be.
    emoticon Enjoy that piece of cake with your Grandpa. Life is too short to skip making memories.

    Looks wonderful! I need to make quinoa more often, it's taken a back seat lately.

    You eat a piece or two of that cake girl. That is baked lovin' from your Grandpa and enjoy it for those of us missing our Grandpas!

    I have a package of quinoa waiting to be used - I'll have to get creative like you did! Awww, it's so sweet your grandpa makes & brings you cake!!! You could definitely fit that into your eating plan every once in a while. :)
