I grabbed a bag of pre-mixed salad and a couple of grilled chicken thighs from the fridge and headed to work only to realize after I left the house that I forgot to grab the tomatoes, green onion and dressing. I was not looking forward to the salad but figured I'd give it a try before heading to the food court to pay way too much for a meal that was going to cost me way too many calories.
I cut up the chicken and warmed it a litte then added it to the bag of salad mix and shook it all around. As it turned out, the chicken had enough moisture and seasoning, I didn't miss the other ingredients. Sure, the tomatoes and onion would have been nice, but the dressing wasn't missed at all.
SCORE for a healthy salad packed with lean protein and veggies. I'm STUFFED for fewer than 300 calories.
