Today I made..

Steamed Salmon w/ Broccolini (used a spice rub and some maple syrup on the salmon, steamed both in my bamboo steamer, then served with a squirt of lemon juice)

(I just randomly put some ingredients together and it turned out really good!).
Lemon Artichoke Chicken w/ brown/wild rice and Braised Kale www.foodandwine.c
(For the chicken, I just put chicken breasts, salt, pepper, lemon juice, 1/4 cup chicken stock, 1 tbsp vermouth, and a can of artichoke hearts in a pan, drizzle with olive oil, top with oregano and parsley, and bake uncovered for 30-40 min until chicken is cooked. I mixed the kale into the rice when it was done). So delicious!!! The bf really liked this one.

Chopped onion, bell pepper, and mushrooms for omelets, and my weekly half-turkey half-pork breakfast sausage to go with them: recipes.sparkpeop
And finally, Guacamole! (for eating w/ turkey slices and lettuce) Mash 2 avocados with some salt and juice of 1 lime, add 1/4 cup chopped cilantro and 1 small diced jalapeno pepper, store with plastic wrap over the top of the dip so it doesn't brown.
