My Recipe

Spinach zucchini blueberry bread

Minutes to Prepare: 15
Minutes to Cook: 40
Number of Servings: 12


* whole-wheat flour, 1.5 cup
* Cinnamon, ground, 1.5 tsp
* Baking Powder, 1/4 tsp
* Baking Soda, 1/2 tsp
* applesauce, 1/2 cup
* fresh baby spinach, 1 cup
* Egg, fresh, 1 large
* Brown Sugar, 1/3 cup, packed
* Vanilla, 1 tsp
* Fresh Blueberries, 1 cup
* Zucchini, 1 cup, shredded
* Walnuts, 1/2 cup

Preheat oven to 350 and grease or line muffin pans for 12 muffins.

In a small bowl, mix together dry ingredients.
* flour, Cinnamon, Baking Powder, Baking Soda

Use a blender to puree spinach and applesauce.

In a large bowl, beat together the egg, spinach-applesauce puree, vanilla, and Brown Sugar. Slowly stir in the flour mixture until just incorporated. Fold in the zucchini, walnuts and blueberries.

Pour into a greased and floured bread pan and bake for about 40 minutes (or when a tooth pick comes out clean.
