'Tis The Season...

of fresh fruits and veggies! My father-in-law has been sending me Roma tomatoes and sweet peppers out of his garden and the tomatoes have made great chili, but it's time for something different before these things go bad or I have to put them in the freezer.

FAJITAS!!! mmmm! I love fajitas and so does my one son. I'll have to get more onions as my last ones got used up in the chili. I think fajitas are my favourite way to eat sweet peppers, other than sliced raw with dip. mmmmmmmmmm!

What's the latest out of your garden (or farmer's market) and what's your favourite way to prepare it? I've also gotten a bag of apples and made applesauce as part of a breakfast cookie recipe, but today would be a great day for applesauce on its own. :D I've also rediscovered how much I love baked apples! It's like apple pie without the crust!

I don't have a garden, but my neighbor does so between tomatoes and pickles and a few peppers....loving the fresh tastes. I did make some refrigerator pickles and with some extra juice I through in a bunch of cherry tomatoes cut in half. I love homemade applesauce. I like it chunky and sometimes put other fruits in it too.....raspberries especially.
I like sautéing sliced onions and peppers together for sandwiches like turkey burgers.
Have a great weekend and let's keep making those healthy choices together. emoticon

Our apples are not ripe enough to eat out of hand but they are fine for baked apples. I love them and we have them for dessert several nights a week.
