Small walk but got lots done today

Tuesday, September 10, 2013

STILL working on the corn today so I just got outside for a 10 minute walk around the immediate area - down the hill 2 blocks, over one, up the hill 2 blocks and back to our house. I actually had a busy day - got up and got Kyle to school then came home and ate breakfast and vegged in front of the TV for awhile. I had to work tonight so I wanted to see if I was tired enough to go back to bed for a few hours. Yep - decided that it was something that I wanted to do so I slept until about 12:30.

I then spent the afternoon clearing out the deep freeze and our indoor freezer so I'd have room to store the newly frozen corn. Then hubby and I finished cutting the corn off the cob, bagging it up and preparing it for freezing. We had 190 ears of corn and got 40 quart-sized bags of corn into the freezer! LOVE having freshly frozen corn! Busy day, though.

THAT sounds like a quality workout, Kelly! As a budding home chef & healthy foodie, I have to ask about the ways you prepare the corn!

We did the same earlier in the season. I left a lot on the cob and just blanched it. I also put one bag in the freezer without doing anything, just to see the difference. I wasn't crazy about the "nonblanched" corn. It tasted fine, but was a bit mushy to eat off the cob.

All the work will be worth it when the snow is flying and both of us are eating sweet corn!

I hope you've recouped from your race! I'm still so excited for you.
