Breakfast - eggs, lard, tomato, pepper, onion, zucchini, eggplant, part of a cup of herbal tea with gelatin and coconut oil
Snack - rest of herbal tea with gelatin and coconut oil
Lunch - roast pork, celery, onion, mustard, tomatoes, homemade mayo
Supper - chorizo, hamburger, onion, pepper, tomatoes

I have pneumonia. Ugh.

    I ended up not using the coconut oil. Something I read recently suggested it and I thought it worth a try, but decided it was too much work. And it was semi-solid because we're having such beautiful weather. I'll give it a try sometime when it's hot enough to be liquid.

    As for the gelatin, Dana Carpender has done several posts about the health benefits of gelatin. According to her, and to research that she cites, there are some proteins that are found in gelatin that we don't usually get because we don't eat gristle and gnaw on bones and things like that. So I usually put gelatin in my morning and evening tea.

    How is mayo made with coconut oil? I bet the texture is fabulous!
