My Waffle Quest

As some of you may know, I was recently fooled by waffles. I thought they were light doughy goodness, but after calculating the recipe, they had 400 calories per waffle for the recipe I was using. They were still doughy goodness, but they were making me doughy as well.

Now I'm on a quest. A quest for a healthy waffle.

I started with Chocolate Covered Katie. She's an awesome Healthy Dessert blog. She, of course, would have my answer! She didn't disappoint: http://chocolatecoveredkatie.c

She uses spelt flour. I have no idea what that is. I'm normally the type of person that doesn't buy into all the specialty flours, and sweeteners.

Let's look at the facts.

White Flour vs Spelt Flour per 1 cup

1g fat 4g
95g carb 100g
3g fiber 16g
13g protein 16g

The only benefits I'm seeing is the fiber increase and the small boost in protein. I can add a fiber supplement if I'm really that hard up for fiber.

I went to the grocery store tonight. Really craving waffles, and went down the baking aisle longingly. I saw Soy Flour. I looked at the nutritional facts and I was sold.

1g fat 1.22g
95g carb 38g
3g fiber 17g
13g protein 47g

The catch is that it is more expensive for 1.5 lb bag of soy flour than it is for the 5 lb bag of white flour. about 3 times more expensive per ounce. Dylan and I struggled financially for a while, so it's hard for me to spend so much more money on something like flour. I buckled and decided to give this small bag a try.

Instead of eggs and butter, she uses applesauce. I've used apple sauce in baking before, so I'm not nervous there.

Stevia instead of sugar. and way less milk.

The outcome with these changes?

Soy Flour Waffle
70 calories
0.1g fat
12.5g carb
4g fiber
7.3g protein

The nutrition looks way better, but how will they taste? I will be finding out tomorrow.
