I am calling this a BLT sweet corn scramble.
Last night for dinner we have BLT (turkey bacon) and fresh sweet corn. I took the two leftover tomato slices, two slices of turkey bacon, chopped the lettuce, cut the corn off that last little pathetic cob that was left. Put 1/2 tsp. of unsalted butter in a non stick pan. Poured in the eggs, added the chopped bacon lettuce and tomato and the sweet corn kernels. Scarmbled until the doneness I like. Total calories: 216, carbs: 16 Fat: 8 Protein: 20
Think I will add some fruit.
