Last week I started the gym and now I am going to focus on eating better again. =) I hit the grocery store and have everything I need to make my meals a success. It's been so great getting back into the swing of things! I actually gained weight since my last weigh in but I know it is just water and everything so I'm not concerned. It'll come back off.

Soooo..... I love pizza. But I don't love the bread carbs! I hit SparkRecipes for ways to get my pizza fix but in a healthier way. I found a lot of good ideas and have been making them over the past week.

For lunch today I made a portabella cap pizza. I used one mushroom cap (30 cals), brushed each side with a tablespoon of extra virgin olive oil (120 calories), 1/4 cup of Hunt's Garlic and Herb sauce (20 cals), 1/4 cup part skin mozzarella cheese (80 cals), and a dash of Italian seasoning with crushed red pepper to top it. 250 calories total and it was soooooo yummy!

I pretty much did the same for other lunches with different veggies for my crust!


And eggplant!

So yeah, I look forward to finding more stuff to make. =)
