Tonight I made a yummy new recipe. It even came from SparkRecipes!
Baked Potato Soup:
According to the nutrition label, it's about 230 calories, and that's WITH the bacon and shredded cheddar cheese!
I used my immersion blender to give it a creamy texture, and boy- do the onions and celery come through to give it a rich, nuanced flavor. Some people (like my husband) may want to add a bit of extra salt, but I was just fine with a little bit of salt in mine.
As far as how well it was received in the household:
- Hubby says he'll take this to work with him tomorrow for lunch.
- Kiddo first complained about how we were having soup for dinner tonight, and then by the end of dinner said "That was good soup, mom!"
- I went back for seconds.
Now, granted, nutritionally, it may not be THE BEST soup (carb heavy in relation to protein and fiber) but it's still delicious. And, if you consider I didn't follow the recipe to a T: things like Lactose-Free Milk, instead of Skim Milk (although mine is a skim LF milk) and sort of tripled the amount of potatoes and veggies- then the numbers are skewed a little bit.
All in all, though, it's a great comfort-food type meal and I'll be making it again for my family in the future!
