If you haven't tried the recipes on here yet, you do yourself no favors. I've made four, so far, with three of them being absolute winners. The fourth one (a cheese enchilada recipe), I wasn't particularly impressed with it. It tasted okay, but it was way too much work - if I'm going to beat myself senseless to make something in the kitchen (especially when it's this hot), it had better be shining from its delicious, foody depths.

I made some really good cinnamon apple muffins for breakfast that are filling as hell. The only problem there was that I didn't spray the muffin papers beforehand, so most of the batter stuck - boo, hiss! I'll be making them again, though, for sure. I have a big problem with breakfast a lot of the time because I get up at 4:30am for work and I'm usually too tired or too sleepy or too rushed (and sometimes all three) to take care of my breakfast needs. These muffins were the solution - just grab and go. My kind of meal!

Still dreaming of that cauliflower "mock potato" casserole. My God, that was awesome. I mean, REALLY awesome. If you're so inclined, look up "Cyn's Mock Potato Casserole" on SparkRecipes. And try it. I dare you not to fall in love with it.

Aby's gaining definition in his body, especially his torso and arms. He's looking good. I wish that I were doing as well, sigh. But I'm going to keep trying, keep trying, keep trying.

    I spend way too much time surfing sparks recipes. I have a ton saved and have tried a few.

    I'm considering the "Tropical Sweet Potato Salad" for a 4th of July picnic.
