June is over onto July

873 fitness minutes, that's how many I clocked for June. Woohoo!!! I really thought I'd get 1000 but that's okay. I did 97% of what I was supposed to do... and its more than I've been doing. I'm excited to see July! I've also been tracking my nutrition and not doing too bad with that. Last week I bought all sorts of fruit and veggies at the farmer's market. I hope to do even more this week. My kids are going to turn into ears of corn.. lol. This week I'm going to get asparagus and experiment with it! Later tonight I have a date with a cantaloupe (-: I must get that cut up for my son. He eats very little in the area of fruits and veggies.. he's an extremely picky eater, so I let him pick out some things at the market and he came up with the cantaloupe.. I sure hope we got a good one.. I'm not sure how he became a picky eater because I am not, but my husband sort of is, so I'll blame him LOL. If anyone has any suggestions to what to do with my picky eater.. let me know Please!!!

    If the cantaloupe isn't sweet enough, toss it with a little powdered sugar. You could look up some recipes together and let him help make them.

    My older son is more picky. One of his favorite summer foods is a BLT boats (though I don't think he'd eat an actual BLT if I put it in front of him). To make the boats you peel, half and scoop the seeds & some pulp out of a cucumber. Next, mix lettuce (I use a lettuce mix with carrots & cabbage), chopped tomatoes, bacon bits, mayo and black pepper. Scoop the lettuce mixture into the cucumber boats and enjoy!

    BTW, one of my favorite ways to eat sweet corn is to with it with onions, Anaheim peppers and cumin (and I like a little jalapeno salt).
