It's a beautiful Sunday

On my walk with the dogs this morning, the birds were singing, it was nice and cool, lower humidity than it has been, just a beautiful morning. I thank God for beautiful mornings, but I also thank Him for the days that aren't so beautiful because each season has a purpose. I am getting a little farther up the street, which is a steep hill, every day, but still have to stop a few times to catch my breath. I went out into the woods yesterday (didn't I learn my lesson yet?) to take photos, so praying I won't end up with millions of chigger bites. I sprayed everything, even my clothes and tucked my shirt in, so we'll see.

I was going to try a different church today, but I forgot to set my alarm and didn't get up until 8:30 (of course the dogs wake me up at 7 every other day). By the time they went potty and we got back it was 9, and I still had to get ready. The trip down the mountain and to the church is at least a half hour. No way I was going to make it by 10. So bummed about that, but will listen to something on my computer. That does not make up for the interaction with community that I need. I do not want to become a hermit out here! Plus I am anxious to find and interact with a church family again!

Making stuffed peppers today, but adding lots of veggies to the inside mixture. It should stretch my meal further. Trying to make big meals from time to time that I can portion out and freeze. I love those little one cup containers Glad makes. They are perfect to do just that! I bought a rotissere chicken and need to cut that up today and portion out. I want to make lettuce wraps this week and need to find a recipe for the chicken. Although, anything in a lettuce wrap is good with peanut sauce.

    Stuffed peppers sounds good. And I love the idea of making meals ahead to freeze ... it's so convenient.
