Spark Solution Day 1

The first day got off to a great start & a super delicious breakfast, The Bacon Swiss Scramble with Spinach. As, you can see my scramble looks rather different... I've made this before, following the recipe (& it was okay, but I like my verison better). After I joined the Eat Up, Slim Down Challenge www.sparkpeople.com/mysp

, I got into the habit of starting my day out with as many veggies as I could add to my scrambles. This has spinach, broccoli, mushrooms & sprouts in it. I also like to throw in some blueberries or dried cranberries after it's done cooking.

And even though my scrambles were good before, SS helped me tweak them & made them even better. Instead of 2 eggs, I now use 1 egg & 1 egg white. Instead of adding milk & sour cream or miracle whip, I leave them out altogether. Instead of 2 pieces of bacon & 2 pieces of toast, I have 1 each.

Following this plan has really helped me to actually think about my meals & plan things ahead. No more digging through the freezer, trying to find a Smart Ones frozen dinner... I'm actually cooking!

Not only are the meals good, they've been easy to prepare & are quite filling. But this isn't some strict diet that you have to stick to. It's a guide. It's a way of re-thinking your eating habits & living healthy. And its so full of encouragement, tips & suggestions, the only way someone will fail is if they don't even try!
