RECIPE: Home Dried Pineapple

I have a really nice Excalibur Dehydrator that hubby bought me several years ago but I have hardly used it. When I first got it, it was an issue with space to wet it up and plug ins. We have since moved to a different house and space and plug ins aren't an issue, but time is. I found a site that talked about dehydrating canned pineapple so I decided to try it. I know most of the nutrients are already gone by the time they are canned, but being short on time it was a simple solution.

I used 2 regular sized cans of sliced pineapple in natural juice (which I drank) and dried them for approximately 12 hours on the fruit setting. one can fits on one of my dehydrator trays. I don't know what the nutrition content is after being canned and dried but I must say they were good! Between me, hubby and the boys this bowl lasted maybe 15 minutes. LOL! I think I shall buy a bigger can next time and dry more. I would also like to try dehydrating frozen and other canned fruit (time saving here and healthier snacking than junk food).
