Come and check out my delicious Cold Bean salad!! Yummy!

Bean Salad (1serv=1/2cup)

A delicious cold bean salad that's a jiff to make and high in fiber! Only 130 calories for a 1/2 cup serving.

1 can (15.5oz)garbanzo beans, rinsed and drained
1 can (15.5oz)Red Kidney Beans, rinsed and drained
1/2 cup Frozen Peas
1/2 cup Frozen Corn
1/2 cup Onion, chopped
1/2 cup Green Bell Pepper, chopped
1 Can (14.5oz) Diced Italian Tomatoes
1 tsp Italian Seasoning (2 tsp, if you buy only regular diced tomatoes)
3 TBS Red Wine Vinegar (can substitute with Cider Vinegar)
1 TBS Cold Pressed, Extra Virgin Olive Oil
1 clove of Minced Garlic
Salt and Pepper to taste.



Combine the first ingredients together in a large mixing bowl, set aside. In a small bowl, mix the rest of the ingredients until well blended. Pour over bean mixture and toss. Pour into a gallon sized zip-lock plastic bag and put in refrigerator for 2-4 hours, turning over occasionally to marinade flavors. Serve cold.
