Mix It Up part 2

Today we had a mix it up potluck. Oh my. Some of the recipes were delish! Roasted root veggies, steamed broccoli, spinach and garbanzo salad, stuffed peppers. I brought a chicken and blueberry salad. We are still #4 and it is week 8! I'm at the bottom of my team but I've definitely have been eating more fruits and veggies than I normally do. The thing that caught us was what types to eat as part of the way through the challenge everyone discovered they had either stopped losing weight or they had gained! Gotta watch out for the starchy veggies and too much fruit can do ya in! Discovered I'm not a fan of Brussels sprouts. But at least I tried them! Found new ways to prepare veggies. It was worth it in the end. I'm probably healthier for it.

The next challenge is the National bike challenge. My son finally got his brakes fixed so I have no more excuses for not riding my bike! The challenge goes through September.

    It's interesting what we learn along the way. From "I tried brussel sprouts, and decided they aren't for me" to "I was eating a lot of this vegetable, but it doesn't work with my weight loss" - all valuable things to know! And the things you're learning along the way will certainly help over the LONG term!
