What an awesome holiday! I was concerned about what I would eat in place of the usual cook-out fare. I came up with some healthy options since I was hosting the party. I made quinoa tabbouleh. A salad with parsley onions, tomato lemon juice and cucumbers. I also made a mango avocado salad it was delicious. I made black beans and rice also and chicken kebabs wit peppers mushrooms and zucchini. I only ate one cupcake and lots of pineapple. I was able to enjoy my company and not overindulge. This life gets a little easier and easier each day. It's all about choices.
