Good afternoon my friends.
For some reason, today was long for me at work. Perhaps because it was my first Tuesday in a couple weeks, or maybe it is the very nice weather. I know my back and sciatic was kicking, and I am sure that was part of it. I brought the rest of the peanut butter cookies I made to work. I made them last night along with the applesauce I cooked. My son and his girlfriend had come over, and we had a nice supper together. He got the job he was waiting for, and had his first day of training yesterday and was exhausted.

These are the peanut butter cookies with no eggs and no flour
1 cup peanut butter (I used 1/2 chunky, 1/2 smooth, but like it all smooth)
1 cup brown sugar
1 tsp baking soda
1/2 cup nonfat greek yogurt (I used Dannon vanilla)
2/3 cup mini chocolate chips (optional)
mix all well, put by tablespoonful on parchment paper lined cookie sheets. 2 " apart. (Important, they melt down, and to keep them from becoming one giant blob).
Bake 10 minutes at 350 degrees.

I digress. Making cookies though not necessarily a healthy thing, it filled my urge to have something sweet, and I shared it with my son and his gf, as well as at work, so I ate fewer than if I hoarded the whole batch for myself. Now, the applesauce is another thing. I love applesauce.

This morning, I took the chance and did a brief five minutes of my physical therapy stuff. First time in a few weeks. I totally avoided the exercises that bother me, and just tackled that gently. Go me. Five minutes is five minutes. And, I walked 1.6 miles at work today.

I started crocheting the light afghan with the bamboo yarn. No pictures, yet. It is working fast and feels smooth, cool, and warm at the same time. Enough to block a draft, but not so much as to feel hot. It will be a nice summer lap throw.

When I went for the bloodwork yesterday, I decided to stay out of the craft store. I checked online and they didn't have the yarn I wanted. I will visit another one later this week instead.

shepherd's pie with corn, potatoes, and ground turkey, catsup, milk, and tossed salad and dressing.

Accomplishments this month - staying positive in the face of pain; Thinking creatively; spoke in public for a group of 72 ladies; completed edit on two manuscripts (one was short) and sent them out for a competition.

All in all, even if I did not lose weight, it is a good month. I am gaining momentum, seeking answers (healthwise), focusing on creativity, and letting go of mental and physical roadblocks - or at least working on it.

Supper beckons.

p.s. Read an interesting article today

and work proved to be interesting - I received kudos for catching the errors in a book the other week. I listened to a couple others today - one had me laughing.

    Sounds like you had a productive day! Cookies do not appeal to me, but I sure do love applesauce, unsweetened though. For me, fruit is sweet enough as it naturally comes! My lunch salad was spinach, walnut pieces, snap peas, gala apple, dressing, and chili pepper flakes. I like daikon in it when I can get it too. My cereal is Kashi Go Lean Crunch which I eat with my fruit shake.
    Got to admit it is hard to want to exercise when you are having flares and hot spots :(
    Hopefully we will see better days soon. Warmer weather wouldn't hurt. Last blast of snow and cold then hopefully it will return to normal later this week.

    Sounds like a good month all in all. I hear you on the back pain. My neck has been giving me fits. It will be interesting to see if this diet I'm doing lives up to its claims and helps pain and autoImmune diseases. He did say if you've had it for a while and have a lot of damage the results are less favorable. Somehow I think I will fall into that category. I'll take any improvement I get though.
