Almost back on track

So, since I got food poisoning on my business trip two weeks ago, last week was mostly spent trying to get caught up on all my work stuff. I feel like I am almost caught up now and have started trying to pay more attention to my healthy eating / reboot program. I have been doing really well with cooking more, especially more vegetables. Tonight I had a lovely dinner of some leftover baked potatoes - the cool purple ones, they've got to be healthy because they're purple right? LOL. And a big helping of lentils with bell pepper and onion, and a half an avocado to go with it. YUMMY. Especially the avocado.

I have a new meal prep trick which I have come up with which seems to be working really well for me. It's s sort of like "rolling meal prep." Each day I have made one item and then I have something fresh that day and leftovers for the next day or the next two days. Then the next day I make a different item. On Sunday I roasted a chicken and baked a whole bunch of potatoes, so I had that, plus beans out of the freezer. On Monday I made a swiss chard stir fry with chard out of my garden and had the leftover chicken and potatoes. Today I made the lentils, had that with the rest of the leftovers.

I feel like this is working out for me a little better than doing everything on Sunday. First of all, because it just seems like so much work to do all my meal prep on one day, so even though I *say* I am going to do all my meal planning and prep on Sunday, I almost never do. Also, I get out of the house almost every morning to go row and we often go for coffee or breakfast afterwards, and since that's right by a grocery store it is super easy for me to pick up one thing to fix for breakfast or lunch. It seems like if I have one thing that is a leftover it is not so hard for me to come up with another thing to go with it, even if it's just a sliced up avocado or a half a cup of broccoli out of the freezer.

That's another thing I've been working on - eating things out of my freezer. Tonight I am defrosting a pork chop and tomorrow I'll roast it. I have leftover lentils and I still have a few of my potatoes and tomorrow's meals are planned! It seems like just planning things one day ahead of time is working out well for me. I guess you just have to find a happy medium and settle on what works for you.

Yay, tomorrow is Wednesday - happy Hump Day to ya'll and I am SO looking forward to the weekend! I am going to see if I can possibly take a day off next week and continue wrapping up projects around the house!
