Wow it's been almost a month since my last blog! I don't know where the time goes. I'll give you a quick summary of what I have been up to...
I survived the 21 day sugar detox...it was actually delicious and easy. Here's just a quick look at some of the food I enjoyed.
On a whim, I got a new Explorer :)
Did a little baking for Easter with this
to make these...brandy balls and coconut rum balls
And these...brownie & nutella rose cupcakes
My sis and family are visiting for the week. It's been nice spending time with them. My nieces are a piece of work & crack me up!
I made this sandcastle nutella cake for them
Oh and I bought these coconut butters. I can not wait to try some new recipes with them.
I ate way too much on Easter & am on a bit of a slippery slope with carbs & sugar...giving in to pms cravings
I am definitely feeling it and it's not a good feeling. I am also feeling a bit scattered and unorganized with the craziness of the Easter weekend and my sister's visit. I'm kinda flying by minute-by-minute without my usual plan of attack. I'm working half-days so I can spend the afternoon/evenings with my family while they are here since I only get to see them once (or twice if I'm lucky) a year. So honestly they are my focus and the food prep/batch cooking & gym time have slipped to the back burner.
The only plan I have is to get on the treadmill first thing in the morning this week. And I may do another round of the 21-day sugar detox after my sis goes back home.
Well, I think I'm going to go work on a menu for next week
