Okay, I Got Through Easter!

We didn't have an Easter celebration but I managed to get through the day, a breakfast at church and a ham dinner I cooked at home and not have a gain. In fact the number on my scale actually dropped a little this morning. I didn't buy any Easter candy so I don't have that to contend with. I would have a hard time if I had to deal with chocolate bunnies and Peeps so it is best not to have them around.
I have to say that except for a small ham, the dinner cost me very little. We had scalloped potatoes from my last year's garden, the last squash from that garden and a pumpkin pie I made (again from my garden) and had frozen.
I was a little worried about a weight gain from extra salt in the ham but I drank lots of water after eating and it doesn't seem to be a problem.

    It's not quite as good as 'real' pumpkin pie, but I tried something this weekend with a can of pumpkin..15 oz..two eggs, cup of vanilla lowfat yogurt, and cut the sugar to 1/3 and used brown, then lined the bottom of a 'flan'/tart pan with a sprinkling of brown sugar..I nuked it for about ten minutes..each serving of 4, I believe has about 140 calories (oops I added a tablespoon of margarine, worried about sticking, or it wouldn't have near that many)..not exactly creme bruleƩ but not bad..

    oops, and your usual spices

    I also used turkey ham...4 oz has like 60 calories....

    I wish that I had no ill effects from the ham, I looked like a toad this morning ;) Way to go . I had a bit of goodies for the kids but I also sent it home with them.Wish I still had stuff from the garden ,My freezer went bad and we lost it :(
