Chicken lesson

Last night was pretty cool. I was shown how to cook chicken breasts in a skillet. Now I want a cast iron skillet! But I know it's not necessary. They turned out so tasty and tender. And they don't take long to cook at all. The trick I missed was mashing them down before cooking them, so they're nice and uniformly thin. Can't wait to go home and try it for myself. emoticon

    Maybe I should try that. I'm horrible at cooking chicken. I always overcook it because it never looks done to me. But if I pound then all thin, that would be better!

    When you get your cast iron pans, make sure you read up on caring for them. You don't wash them with soap.

    Smiled at your blog. Watched my Mom pound chicken breast with food mallet all the years growing up, and she always cooked in cast iron pans. Now they are too heavy for her to use. Sounds like you mastered it. Good job! emoticon
