VEGETARIAN SPRING ROLLS.....more food porn

(I'm in the picture...can you find me?)

Looks like another great recipe I am dying to try.
I aim to keep improving on increasing my veggies and trying new things.
As for the ingredients....anything I don't usually have ...I'll improvise.
Except the rice wrappers...but they are easy enough to get in my area.

I was watching a video this morning about a school that has begun teaching 4th graders about diabetes and one of their assignments is to find someone who has diabetes and fill out the registry form. The class is pre-dominantly Hispanic (a population that has shown a tendency towards diabetes).

Some people may think that this could get kids overly concerned about food issues. Some may point out an increasing number of kids developing fear issues over food. Personally, I think those numbers are much less that the number of kids who go the opposite way and may develop a healthy attitude towards what they eat. Wish I would have been exposed to that as a child. Maybe classes like that will help start a trend toward healthy choices vs the junk they push in school snack bars and vending machines.

    You are so right!!! We didn't have vending machines until high school, but they didn't have anything remotly healthy in them. Neither did any of the vending machines in any place I have ever worked. I did love when we had a cafeteria where I could purchase a healthy lunch... but didn't always make the best choices there either!

    Hope you are doing well on the challenge. I wish I were doing better, but as I always tell others... every pound is a victory!!!

    Those look so yummy. I am going to try these. Thanks for sharing. I agree that kids should be taught to eat healthier. My grand kids don't have that choice. Their parents eat a lot of fat and junk. emoticon

    I agree exposing kids earlier to healthy eating is another way to get through to them. Especially in the case where their parents are setting a bad example. Kids can then challenge their parents to eat better and provide healthier foods. emoticon

    I see that beautiful face in the egg roll! CUTE!!! It does look delicious adn am going to try the recipe too.

    As for teaching kids about diabetes, I think it is an EXCELLENT idea! There are so many diagnosed with type 2 diabetes (ME INCLUEED!) and the sad thing is, there's so much that can be done to improve our health to either prevent it from happening or control it.

    I have to say for me, I was diagnosed in Jan. 2010, and after proper nutrition and exercise (leading to much weight loss) I have my blood sugar completely under control. I am very proud about that AND grateful, too, that with the help of all I've learned on SP I could accomplish this.

    Point being, kids really DO need to know how to take care of their bodies properly. There's only one go-'round on that one. Frankly, I believe it's empowering for these kids to have information about how to properly nourish their bodies!

    Our school doesn't have any snack bars or vending machines, but most of what is served in our school lunches ends up in the trash cans. The kids won't touch it, and I don't blame them. Much of what our school is forced to serve is government issue. They even dictate what recipes and brand names that we have to use. Our cooks are no longer allowed to cook from scratch the foods that the kids used to love. They are required to serve frozen and processed foods that the government dictates. It is nasty and the kids hate it. The amount of preservatives in it are astronomical. It changes the look, taste, and texture of the food. We often hear comments like, "I love chicken, but that is NOT chicken." Mostly, we serve mystery meat, not because we want to, the government says we have to. At our school, our food was MUCH healthier before all of the political interference, and I'm sure it was that way at other schools as well.

    I just had vegetarian Spring Rolls for lunch on Thursday. I was in the "Big City" and stopped at the Imperial Garden restaurant on the way home. They were delicious. There was a small bowl of mustard sauce and one of sweet and sour to dip the rolls in. I made the mistake of trying the mustard sauce first and it was SO HOT that it took a full glass of water to put out the fire. I ate the rest of it plain and it was so good that it didn't need sauce.
    I hope you enjoy your recipe as much.
    I taught Foods and Nutrition to grades 6 through 12 and always felt that the relationship between our eating habits and the accompanying diseases should be taught to even younger students.

    I made my own egg rolls. I baked them. They came out really good. I don't remember where I got the recipe though.

    I feel if I have been given classes on healthy eating I wouldn't be needing help now.
    We were never told about portion sizes either. This is important too.
