Team Challenge - Day #5

Time for a lunch post! This one was not an unmitigated success, but it worked!
I'd had a fairly high carb breakfast and was also planning supper to be higher than average, so I knew I needed to limit lunch to mostly protein and fat. Fortunately, my Mom always raised us with the mantra that "there's nothing wrong with leftovers; it's when they get to be leftover leftovers..."

So I knew I'd be starting with those leftover cumin carrots from last night.
Two veggie servings and that would also provide the bulk of my carbs for the meal. Now, what to go with? Aha - a breadless sandwich! Two slices of Swiss cheese = 1.5 oz with my brand. Top one slice with 3 oz of skinless chicken breast, 1/2 Tbsp mayo ('cause that's how I like it, and I wasn't going to feel deprived). Then the other slice of cheese, and I was ready to eat. Planned on drinking water, as per usual. 382 Cal, 13 Gm carbs, 22 Gm fat, 33 Gm protein.

So what could go wrong with that, you ask? Well, I should have used mozzarella, the other cheese I have on hand. The mayonnaise squished out the holes of that top slice of cheese and made for one of my messier meals. At least I found out what napkins are for! emoticon

    I was still fine on Cal. 382 for that meal still put me at only 1295 for the day. I planned on minimal snacking today, and even though my breakfast and supper were higher carb than average, the calories were not. All my stuff was in range, as it usually is. emoticon
