FYI I'm writing this at like 12:57 am, so I'm considering it Thursday night still, haha.
Thank goodness that my week is over! This has been one of the most exhausting ten or so days in recent memory. The past four days have been especially hard at work - we just got the new trainees at work and they aren't doing so hot, and that's on top of us getting increasingly behind, it's been a stressful, mad scramble. I'm so glad that I have the next two days off. Hopefully now I can get some rest and kick this sickness - even if I have to drive to the car dealership tomorrow to fix an error on my title.
In other news, I've been improving in the food department! The past three days I've gotten up about an hour and a half before normal and cooking. The actual act of doing it has been pretty therapeutic and nice. Today I made this big heap of vegetable beef soup, and 2 cups is only 177 calories, and I got a whole gallon out of it! In case anyone is curious, here's what I used to make it:
1 pound of 91% lean organic ground beef, browned in 1/2 Tbsp of unrefined coconut oil.
1 16oz bag of frozen vegetable medley (carrots, peas, green beans, corn).
2 12" Long celery stalks, sliced
1/4 large white onion, diced
1 1/2 Russet Potatoes, diced
1 32oz pack of lower sodium all-natural beef broth
2 Tbsp Lea and Perkins Worcestershire Sauce
Season To Taste: Salt, Pepper, Garlic Powder, (pinch of) paprika
I browned the meat and cooked the frozen veggies according to the package, then threw everything in a 1 gallon pot, added water until it was full, brought to a boil and simmered for half an hour. Considering I was just going on the fly and not following a recipe, I think it turned out pretty good! 2 cups is super filling too, and a great way to get protein and veggies like crazy. I'm pretty proud of myself.
I'm also proud of myself for finishing this week strong, too. Considering how stressful work was and how sick I am, I totally had a free (although) unpaid out for a sick day. Yet instead of taking the easy way out, I stuck through it and came out the other side. I'm proud of myself for having the wear-withal to do that rather than wimping out.
I strayed "off the menu" today for dinner, which is my way of saying that I didn't stick to my plan and ate something I can't find the nutritional value to. I'm not too worried, though, because instead of a second helping of beef stew I had three sushi rolls for dinner, and considering none of them had creamy sauce or fried meat or crunchies, they calories couldn't be outrageous. Considering I only had 367 calories before that, I think I'm doing well for the day.
Just knowing I don't have to go to work Friday has lifted a huge weight off my shoulders. I think I'm going to take a scalding hot bath to relax the muscles and the mucus, then clock in 9+ hours of sleep before starting my day off. Sounds pretty sweet - and I'm plenty stocked on soup, protein shakes, and apples to keep me on track.
Even though I'm accustomed to going to bed around 3 in the morning, I'm pretty stinking tired! Probably because my body is trying to heal (hopefully!). I'm glad I can leave this blog in an upbeat mood - it feels like forever. Here's hoping that I'll start seeing a change on the scale, too!
