Back when I first wanted and decided to eat healthier, I eliminated all the whites-what pasta, white rice, white bread. And that was a good step, but then I expanded it to most carbs-grains were a no-no! Potatoes-not welcome on my plate! And way no day. And though I felt I was doing a good thing being low carb for my son who has diabetes-some things were left out. Things that I hadn't paid attention to, such as -getting vital nutrients from them such as antioxidants. I was slimmer but had crow's feet and lines around my eyes. And brain power--well...being forgetful became the new normal. But I was not going to have an apple no matter how good it looked!

However since I have become vegetarian I see how much better I feel eating good carbs. I have even more energy and my skin looks better and I actually have more choices in food because I am eating more carbs-and even helping my son because good carbs like fruit help him too. Plus it is more satisfying to eat a banana than pop a potassium pill for leg cramps in the middle of the night!

So my friends, the low carb devotee has retired. Welcome back to my have been long missed , admitted or not. emoticon

    I did the same thing. First eliminating white flours, pastas, breads, ect .. Then I expanded to elimanating fruits and high carb veggies and went on to eliminate all carbs (wheat flours and whole grains) I was always tired, not finding energy to do much but forcing myself to exercise. I was very forgetful. Then I decided to start adding back in fruits, veggies and whole wheat/whole grains. Its amazing how different I feel. Im not losing as quickly, but I look and feel healthier!

    I really like that you gave your experience with how eating food makes you FEEL in your body.
    The healthy plate model is 1/2 vegetables (and fruit). I'm not vegetarian, but eating VOLUME with vegetables is filling and satisfying (and good at reducing colon cancer - we need fiber).

    I'm a carb girl thru and thru! Unfortunately I love all the whites! But you're right, I think it makes a big difference how many carbs your eating total and what kind of carbs because some are better than others. Personally I've noticed that if I stay on the lower end of the carbs range and a little higher in protein, I do better.

    I'm glad you're finding what works for you and helping to teach your son to eat better as well. I agree, a banana is way better than a potassium pill!!

    emoticon Good job finding a healthy medium where you can get your nutrients in too! I've found low carb doesn't work for me at just makes me feel terrible.
