Making up for yesterday

The problem with "taking it easy" one day off means much more work the next day. This was my "to do" list for today.

-Finish project - check
-get stand - check
-Cauliflower,mashed check
-Debone chicken check
-Hummus check
-Mom's phone check
-Sweep check
-Black bean chili check
-work out bag
- Car Windows / take opener out / look for the car charger check

In addition to this, I made a Cabbage Roll meatloaf, roasted cauliflower and an "Impossible Coconut" pie. Oh .. and 3 loads of laundry.

Anybody notice what isn't checked OFF??? If you said "the good stuff" or the "the right stuff" you are absolutely correct! I didn't exercise (so far) today though I did take time to steal a couple of glances out at the sunshine from the kitchen window. Shame on me!!! There's no excuse for this. I am a priority ... my exercise and eating are a priority ... but on my "busy" days, I forget to even factor in the time to take care of those very important things. I keep thinking I'll get everything done and have time to do the exercise and time to stop for a few to eat ... but that doesn't happen. I'm not sure what time I ate breakfast but it was 3/4 cup of steel cut oats, 2 T of dk choc chips and 1 1/2 T of peanut butter with a cup of milk. At 2:15 pm, I ran out of energy ... completely ... like "hit the wall", "can't keep standing" ran out of energy. I still had much I wanted to accomplished before DH got home just shortly after 3 pm, so it was a Fiber One 90 calorie bar with some peanut butter on it, a cup of milk and a banana ... and I'm pooped out again! The desire to exercise is pretty much the furthest thing from my mind right now. My fault ... did it to myself ... not asking for sympathy! Just working things out in my mind!

The happy ending to the day is that our fridge is JAM PACKED with yummy food for this week! Woohoo ... and the Valentine's Day project is DONE! He loves it! I can now attempt to go back to my regularly scheduled life ... LOL ... except for the unexpected overtime for tomorrow morning that means I won't be attending my weight class ... and I'm guessing I will probably have the opportunity to work 2 hours later in the afternoon as well. That'll turn a 7 hour shift into a 12 hour shift in no time!
