I hate weekends! I do fine all week long with eating healthy and the weekend comes along and it's like my mind just cannot come up with a single healthy dish to make for the family! Plus my boys have been CRAZY bad this weekend! And my nephews! My sister stayed this weekend with us and she had a lot of progess with her oldest on using the potty and other things he wouldn't normally do at home. That was exciting! But they were hyper and mean all weekend! I couldn't think straight!

I made spaghetti Saturday night. It was quick and easy and everyone loves spaghetti. While my sister and I were at the store we came across Garden Sensation spaghetti noodles made with carrots, spinach and tomatoes. I thought, Why not? So we bought 'em! I thought they were pretty good, the only problem was they stuck together worse than any noodle I've ever cooked! We had to pull a few chunks out while cooking bc we could NOT get them seperated. But it wasn't too bad. I'd buy them again! And there was a whole serving of veggies in one serving of noodles!

My husband came home from work and made some leftovers for himself. He didn't know at the time. He just kept shoveling it in his mouth, moaning and commenting on how absolutely amazing this spaghetti was! The best I've ever made!! emoticon So I told him he was eating veggie noodles and he could not believe it! Plus I had to confess that my sister added her twist to the mix with some extra spices I wouldn't of thought of. He said we needed to do it more often!

And let me tell you, I love leftover spaghetti and this was even better! I brought it to work for lunch! In fact, I ate one serving and went back for a second (not really wanting to but wanting more). I heated it up and then noticed I had apple sauce in the fridge from last week. So instead of gorging myself with spaghetti I ate a cup of apple sauce and if I was still hungry I would eat the second bowl. I threw it out bc I didn't want it. Proud moment!! Pasta is a weakness!!

My weigh in was horrible this morning. 185 lbs. 3 lb gain! I seriously think something is wrong with my scale! Its one of those dial scales and I literally watched it move after adjusting it to zero, and I hadn't even gotten on it! I think I need to invest in a new one. Not to mention I've been going back and forth between 185 and 182 for the last SEVEN WEEKS!! UGH!

    The noodles sound really good. I'm going to have to look for them. I didn't know they made anything like that. I bet if I didn't tell hubby he would eat them to.

    the noodles sound great wish they sold them in my grocery store. Also i always found those dial scales to be unreliable too. get a digital scale Sean and i have had our 20 dollar one for 3 years now and its almost exact to my doctors for accuracy. As for the weight fluctuation first of all if you weigh yourself everyday may i suggest only once a week? i used to weigh myself everyday and got so frustrated because it always fluctuated but started weighing myself once a week and even if i go up a pound it is not so stressful and water drink lots of water

    How do the veggies noodles compare carb wise to standard noodles? Are there just added veggies or all they all veggie? Sounds delish - I love spaghetti!
