I have been a diagnosed Celiac for about 10 years. Avoidance of Gluten substances from wheat, barley, rye, and oats have helped me to get healthier and until recently, stay healthy. For anyone who suffers from Celiac, the smallest slip can throw health and well-being backward quite severely. Lately, I've noticed some of the old symptoms recurring: headache, IBS, sleep disturbance and night sweats, and most discouraging of all-RAPID WEIGHT GAIN. I thought there must be some sneaky allergen getting in unnoticed but scouring all the labels of items I eat turned up nothing. Withthe help of some research and a nutritionist, it appears that I may have developed a secondary allergy to CORN. This is not happy news as the gluten-free lifestyle can already be quite challenging - I'll let you know what I learn as I learn it but I wanted others who may experience similar symptoms and struggle with weight loss/maintenance to think about the possibility of food allergies and leaky gut syndrome before deciding that diet and exercise just plain aren't working.
