Edamame Dip

This would be a great addition to your Super Bowl spread this weekend. It’s good for you and taste delicious!
Edamame Dip:
Makes 2 cups; 48 calories and about ½ gram of fat per 2 tablespoon serving
-8 oz. package of shelled, ready to eat edamame (about 1 ½ cups) Find in organic freezer section
-1/3 cup cilantro leaves (or I will use basil or thyme)
-1 avocado, peeled and chopped
-1/3 cup reduced-fat sour cream
-1/3 cup water
-2 tbsp. fresh lime juice
-1 tsp. salt
-1/2 tsp. black pepper
-1/4 tsp. toasted sesame oil
-1/4 tsp. ground cumin (optional)
1. Put the edamame in a food processor and pulse several times. Add cilantro; pulse again. Add remaining ingredients and process the mixture until smooth.
2. Serve with veggy or corn chips or cut-up vegetables.
