Treated my family to breakfast for dinner tonight: pancakes! Found a recipe online for thin buttermilk pancakes - super easy and very low effort. Added thawed blueberries - love the antioxidants. Peeled and sliced thin 3 granny smith apples - sauted in orange juice. Also tossed some "soy" breakfast sausages in the oven.
For me, the cakes needed no butter or syrup. I went with blueberry pancakes topped with sauted apples - sausage on the side. I'm loving it. Rest of the family did a bit of butter and syrup and were happy with the meal too.
