Mason Jars- Who Knew!

As some of you know who have read my other blogs, I have a really hard time eating during the day- I will go literally all day without eating (I'll just drink water for the day) and then I eat dinner. So I got this awesome idea from my co-worker (who got the idea on Pinterest) and tried it out last night! It's salad in a mason jar!!! I went to the store last night and bought spinach, romaine lettuce, tomatoes, dates, strawberries, almonds, bell peppers, zucchini, squash, mushrooms, cranberries, cabbage, goat cheese, fresh mozzarella, and 3 different kinds of dressing. I got poppy seed, pomegranate vinaigrette, and balsamic vinaigrette. (I spent $65 on just produce, but I'm sure it'll be worth it because as I got going on putting a few together (one for today, one for tomorrow, and half of one for dinner last night) I realized that all of the stuff I bought will fill at least 4-5 more jars (which makes 7-8 meals) You start with the dressing, and put that in the bottom and then put in the hearty vegetables. This way the dressing doesn't make the lettuce or spinach soggy/slimy. Then you just layer it with all the veggies, proteins, etc. When you get ready to eat it you can just pull it out into a bowl and mix it, or you can tip it upside down (with the lid on of course) and let the dressing flow down over the veggies and then eat it out of the jar if you have a long enough fork! It it easier to take it out into a bowl and if you put enough in each jar, it ends up being really packed so its hard for the dressing to really go over all of the veggies. Any who, it tastes pretty amazing and its super healthy and a very easy way to prepare meals ahead of time and just grab and go!

Other than my new found lunch idea I've just been pluggin away. I have been SO busy the last couple of weeks (my full time teaching job, my second tutoring job, meetings, classes for my teaching job, etc) that I've just been coming and going. I've been having some really weird/scary dreams the last few nights too. "The Boy" said that it might be something that I'm seeing on TV when I watch it before I go to bed, or because I set a sleep timer and go to sleep with my TV on (I don't have a TV in my bedroom, but my apt is a small loft so I can hear my TV in my room when its on in the living room) I might have heard something in my sleep that triggered the dreams. Who knows...I always have "Friends" on when I go to bed- the noise in the background helps me to fall asleep and then the TV will turn itself off after an hour. I'm hoping that March isn't quite as busy, but February is shaping up to be pretty busy.

"The Boy" and I are planning on going to the mountains February 17-18 - it will be good to just get away for a night and not have to worry about work for a whole 36 or so-ish hours.

I'm really going to be bumping up my game again this next month. I'm going to start working out more consistently, and also plan to continue making my mason jar salads for lunches which will help me get a good healthy meal in and also will hopefully continue into dinner too. I've been trying to eat at least double the veggies with dinner to fill me up more with the "good stuff" versus just filling up on the carbs or extra meat which has gone pretty well so far too. I'm going to go to 24 hour fitness on Saturday and will start a membership again too. Its going to cost some money to get started, but after the initial payment it will only be like $30 a month, which isn't bad especially since I plan on working out 4-5 days a week which makes the $30/month pretty cost effective. I know that you can do a year at a time, or even two years and it ends up being a lot cheaper, but I honestly just don't have the cash flow to do that.

I'm determined to get this weight off in the next 17 months so let's get to it!!
