Doing Good and White Bean Soup

This week started out a bit rough but got better. I am now down 13 pounds. I am 12 pounds away from my goal weight. It feels good. My clothes are loose and my skin is soft. I used to get skin breakouts on my chin and those are gone now. It feels really really good.

I made a delicious white bean soup I found on Dr. Fuhrman's site! It is defeinetly going into my recipe book.

Spanish Style White Bean Soup

8 ounces dried white beans (not soaked)
8 cups of no-salt-added vegetable broth
1 bay leaf
1 pinch saffron threads
4 cloves garlic, minced
1 large red pepper, diced
1 tablespoon paprika
1 small bunch of kale, washed and coarsely chopped
black pepper to taste


Place the beans, vegetable broth, and bay leaf in a large pot. Bring to a boil, reduce heat to medium and partially cover. Simmer until beans are tender, about two hours. Remove bay leaf.

Add some hot liquid to saffron and let sit for about 5 minutes.

Add the onions, garlic, red pepper, paprika, kale and black pepper, and saffron to the beans. Mix well and cook for 30 minutes, stirring occasionally.

Notes: I did did not have kale, so I added spinach to my individual bowl right before I ate it.

If you don't have saffron, then you can leave it out.

I soaked my beans the night before so my beans only had to cook for 45 minutes.
